Recipe of the Week: Miso Soup

*Ingredients in this soup can be found at an Asian specialty market and grocery stores with a large Asian section.*

Here is a scrumptious soup to warm you up on a cold day:

What You Will Need:

1 quart of dashi (recipe to follow)
1/2 cup of miso- add more if desired
1/4 cup dried shiitaki mushrooms, sliced
1 bunch green onions, sliced
1/2 pound tofu, cubed

Procedure:

1. Place shiitaki mushrooms  in a pot of water (just enough water to cover mushrooms) and bring to a simmer; heat until tender.

2. In a separate pot, bring dashi to a simmer and add shiitaki mushrooms and  its broth (the water it was cooked in).

3. Add miso paste, stir with whisk (do not boil).

4. Add all remaining ingredients and serve.
